CHEESY SCALLOPED POTATOES

1/2 c. salad dressing
2 tbsp. flour
1 c. milk
1 c. (4 oz.) shredded sharp cheddar cheese
4 c. sliced potatoes

Heat oven to 350 degrees. Mix salad dressing and flour in medium saucepan. Gradually stir in milk. Cook, stirring until mixture thickens and comes to a boil. Add cheddar cheese, stir until melted. Place potatoes in a 10"x6" baking dish. Top with salad dressing mixture. Cover with foil, bake 45 minutes. Uncover and continue baking 15 minutes or until potatoes are tender. Makes 6 servings.

No batter! Scalloped potatoes are made by layering thinly sliced potatoes and onions in a buttered casserole dish with some flour, milk, butter, salt and pepper. Or...the way I do it, start with a thin white sauce and layer as above, rather than the raw flour and milk, top with pats of butter. Bake @ 350 covered for 45 mins., remove cover and bake an add'l. 15 mins., or until done.

My staple for pot luck dinners is Scalloped potatoes

peel and slice 6 med potatoes and lay them in a buttered casserole dish

melt 3 T butter...add 3 T flour ,a dash of S&P,dried mustard,& nutmeg....slowly add 2 -21/4 cups milk....stir until it begins to thicken then pour over potatoes....bake for 45 mins at 350//

Scalloped Potatoes with Ham

2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
Salt and pepper
1 tablespoon butter
2 medium onions, thinly sliced
4 large russet potatoes, peeled and thinly sliced
12 ounces 1/4 inch sliced baked ham
2 cups grated cheddar cheese

Preheat oven to 350 degrees. Butter a baking dish. In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside. In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper. Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese And another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.
