Question #3:

What should I serve with leg of lamb?

Tomorrow I'm having a few friends over for a leg of lamb dinner. I'm stuffing the lamb with sun-dried tomato and goat cheese. One of the friends is a professional chef, so it's always a bit intimidating to make dinner for him! I'd love some suggestions for side dishes. I don't want anything too heavy, like scalloped potatoes; I was thinking about making roasted baby potatoes with herbs de provence (I made them a few weeks ago and they were fantastic) and I would make green beans except that it's really hard to get good green beans right now! I'd appreciate any thoughts on side dishes...or dessert suggestions if you have them!

Question #4:

Burnt sauce in the oven, can i still use it?

I was making scalloped potatoes in a casserole dish, and i guess the mushroom soup overflowed and dripped through the racks and onto the bottom of the oven.. When i opened the oven, there was a huge burnt food smell and more smoke than usual...I tried to scrape some of the sauce off and i put the casserole dish on a baking platter so it would drip onto that. then i put the oven back on and 2 minutes later after i open the oven door, theres lots of smoke and still burning smell comming from it..I have to cook my food for another 15 minutes..will the smell and smoke eventually go away? can i still use it?
I don't want anything to catch on fire! thats my biggest concern

Question #5:

Oven cleaning help...?

Early I put some scalloped potatoes in the oven and I accidentally locked the oven for 10 minute. So I came back and noticed that it said "CLEANING". Are the potatoes safe if they were in there for 10 minutes while the oven was cleaning or should I toss them out?

Question #6:

Tax Return/First Dinner in new house, what should I have? options listed below...?

Thank GOD, finally have some money to splurge on an elaborate dinner for me and my Mom, so whats your opinion on what I should make from the following menus?
1. Filet Mignon, Diver Sea Scallops, Oven Roasted Italian Vegetables
2. Roasted Garlic Cream Sauce tossed with Langostines, Aspargus, Grape Tomatoes, roasted Portabello mushrooms over Egg Fettucini
3. Whole Grain Mustard and Herb Rubbed Pork Tenderloin, with sauteed sweet apples and carrots, cauliflower mashed potatoes.
4. Porterhouse Steaks done on my new cast iron grill pan with a Wild Mushroom Sauce, fried cheese and steamed Bok Choy.
5. Oven Baked Lobster Tail, Twice Baked Potatoes, oven roasted Yellow/Red Cherry tomatoes with Balsamic Glaze and Parmesan.
6. Seafood Chowder with a Huge Loaf of Sourdough Bread, lightly warmed with Garlic Herb butter and sauteed Zucchini.

I absolutely love all of these dishes, so I can't decide? And, if you have any other suggestions/recipes, I would be more than happy to hear them! Thank you very much for answering and have a wonderful evening!
Dottie, you crack me up, but seriously, I want to make them all!!! Wild Berry Cheesecake is for dessert!
"Carb" is on a couple of menu items, but have come to experience that it's just too much to eat with a starch on some dishes, but good point.

Question #7:

How would you best use up "blinky" milk in your cooking?

I really can't afford to waste the milk. It is just turning "blinky" and has not reached the "sour milk" stage. I have a whole half gallon of this "blinky" milk. Can I disguise the taste by making scalloped potatoes or something? Perhaps I could make a cheese sauce and freeze some. Would heating it help any? Your suggestions are greatly appreciated.

Question #8:

Is there anyone still breathing?

I don't know what to do. I'm a fairly smart dude (not conceited), I'm working on my PhD in a fairly advanced field. I'm dating a girl right now, but she has yet to finish college and she's really in debt trying to do so. I'm a fairly nice guy, and I would never hold that against her. My family grew up poor (eating mac-n-cheese or scallop potatoes every night). But she has a job, and always goes out with her friends (who I like and would never tell her not to hang out with). However, a few months ago I warned her not to go out so often (more than 3 times a week). Because I thought that was a bad thing, and I told her that I didn't want to date a girl that went out that often.

Recently she started going out as often as before. I don't know what to think. She's a great girl, and she wouldn't cheat on me. We have great times when we hang out. I don't want to see her throw her life down the drain. It's so frustrating watching from the outside and I try to help her get to a point where she can lead the life she wants to. At this point I don't know what I should do. Honestly, I could do anything in life. I really could become anything, I know what I want to do. But I refuse to finance her way through things. If she wants to get there, she has to do it. Instead she goes out with friends.

I guess this has me really down....I don't know what to do.

Question #11:

What have you made for dinner recently? Here is what i made for supper... Recipes included...?

Wagon Wheel Taco Skillet

1/2 lb. lean ground beef sirloin
1 package (1oz) Old El Paso taco seasoning mix or other taco seasoning mix of your choice
2 1/4 cups of water or of water
1 1/2 cups of uncooked wagon wheel pasta
1 1/2 frozen corn Green Giant Valley Fresh Steamers corn nibblets is what i use.
15 oz of cooked pinto beans (I soak hard pinto beans the night before for 8 hours and cook them till the thickness or consistency is just right for more slow cooking
1 medium tomato or 2 roma tomatos chopped after de-seeded 3/4 cup
1/2 cup of sour cream
1 cup shredded cheddar cheese or crumbled or Queso Anejo, crumbled completely (6 - 8 oz)
1 Tablespoon or 15mL's of freshly chopped chives

1.) In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain after that.
2.) Stir seasoning mix, water, uncooked pasta, corn, beans and tomato into beef. Heat to boiling; stir. Reduce heat to medium-low. Cover; cook 10 to 15 minutes, stirring occasionally, until pasta is desired doneness and most of the liquid has been absorbed.
3.) Stir in sour cream. Remove from heat. Sprinkle with cheese and chives. Cover; let stand 2 to 3 minutes or until cheese is melted.

Cheesy oven baked scalloped potatoes..
This is hilarous... :)
8 small russet potatoes peeled and sliced thin to medium thin
3 Tbsp. butter
2 packets of powder cheese (from the Betty Crocker scalloped potatoes boxes - yes i throw out the dried potatoes and use the powdered cheese)
1 cup 2% milk
enough water to slightly cover up the 2 layers of potatoes in a 13X9X2 inch pyrex pan after adding the 1 cup of milk.

Heat the oven to 450 degrees Fairenheit, bake at least 25 minutes or until potatoes are done and most of the water has thickened. You can add cooked chopped ham when scalloped potatoes are done for this recipe.

Question #12:

Should I add beer to leftover scalloped potato soup?

Hi,
I have a lot of leftover scalloped potatoes with kale and a lot of leftover cooked lentils. I think I'm going to make soup out of it. My plan is to combine the potatoes and lentils pour over the leftover lentil stock, maybe add some vegetable broth if needed, and maybe add a bottle of Irish style ale.

Now, with this little experiment, I'm not actually cooking anything, and I don't want the potatoes to get too mushy, so the soup probably won't need to cook very long, maybe 20 minutes or so. Is it a good idea to add the beer? How long should beer cook to work properly in a soup?

Also, any suggestions for additional ingredients would be appreciated (keep in mind that I am vegetarian, but not vegan). I'm pretty much flying by the seat of my pants here, I'm not working off of any kind of recipe.

Thanks!
Ashley - Leftover scalloped potato soup may not sound appealing to you, but it certainly isn't unheard of. Just do a google search, there are plenty of people who seem to make it. What is weird about added potatoes, milk, and cheese to a soup?
The question I have concerns cooking with beer. How long should beer simmer when adding to a soup? Should it maybe only be used in instances where I'm actually cooking the potatoes in the soup itself (rather than adding in already cooked potatoes)?
Well, I went ahead and made it last night. I put in some veggie stock and the beer, brought to a simmer, added garlic powder and then threw in the lentils and poatoes with kale and simmered for about 15 minutes. It turned out pretty good!
This dish has a lot going for it in that I can now freeze half of it (as scalloped pototoes just don't freeze well in my experience) and it's packed with protein and fiber (as a veggie, I'm always looking to boost the protein in my meals).
On the down side, it is verrry thick. The potatoes broke down a little and essentially became part of the broth. And as you mention, it's quite creamy, but I wouldn't say overly so.
The beer added essentially no flavor of its own, but at least it let me avoid openning another can of broth.
Thanks for your response Ashley!
